Mexican Quinoa by Annieseats
A Mexican quinoa salad that tastes great and is good for you. It has a lot of different textures and flavors. It's great for a quick and healthy meal!
Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Salsa and Greek yogurt for serving optional
Instructions:
Rinse quinoa under cold water
In a medium saucepan, combine quinoa and vegetable broth
Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed
In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, and cilantro
In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper
Pour over the quinoa mixture and toss to combine
Gently fold in diced avocado
Serve the Mexican quinoa salad with salsa and Greek yogurt if desired
