Healthy Paleo Carrot Soup

Ingredients:
- 2 lbs carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can 13
- 5 oz full-fat coconut milk
- 1 tbsp coconut oil
- 1 tsp ground ginger
- 1/2 tsp ground turmeric
- Salt and pepper, to taste
Instructions:
In a large pot, heat coconut oil over medium heat
Add chopped onion and garlic to the pot and saut until softened, about 3 minutes
Add chopped carrots, ground ginger, and ground turmeric to the pot and stir to combine
Pour in chicken broth and bring to a simmer
Cover and cook until carrots are tender, about 20 minutes
Once the carrots are tender, remove the pot from heat and let cool slightly
Using an immersion blender or regular blender, blend the soup until smooth and creamy
Return the pot to the stove over low heat and stir in coconut milk
Cook until heated through, about 5 minutes
