Polish Tomato Soup

Ingredients:

- 5 kg ripe tomatoes, chopped
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 1 celery stalk, chopped
- 1 liter vegetable broth
- 2 tbsp tomato paste
- 1 tsp sugar
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add onions and garlic, saut until softened
Add carrots and celery, cook for an additional 5 minutes
Stir in chopped tomatoes, tomato paste, sugar, basil, and thyme
Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes
Using an immersion blender, blend the soup until smooth
Season with salt and pepper to taste
Simmer for an additional 10 minutes
Serve hot, garnished with fresh parsley
