Vegan Soft Corn Tacos



These vegan soft corn tacos are filled with roasted sweet potatoes, poblano peppers, and corn kernels, seasoned with chili powder and cumin for a flavorful kick. They're perfect for a quick and satisfying meal any day of the week!

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 2 poblano peppers, seeded and sliced
  • 1 cup corn kernels fresh or frozen
  • 8 soft corn tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions:

Get the oven ready by heating it up to 400F 200C

Add the poblano peppers and sweet potatoes to a large bowl

Add the olive oil, chili powder, cumin, and salt

Toss the vegetables until they are well covered

Mix the peppers and sweet potatoes with the spices and place them in a single layer on a baking sheet

After the oven is hot, roast the sweet potatoes for 20 to 25 minutes, stirring them once or twice during that time, until they are soft and slightly caramelized

Warm the corn kernels in a skillet over medium-low heat until they are fully cooked

You can heat the corn tortillas up in a pan or the microwave

To put the tacos together, put roasted sweet potatoes, poblano peppers, and corn kernels in each tortilla

Serve with lime wedges for squeezing over the tacos and fresh cilantro on top
