Paleo Pork with Red Pepper Salsa & Sweet Potatoes



Savory pork chops are served with a colorful salsa made from roasted red bell peppers and soft sweet potatoes in this Paleo-friendly recipe. It's a filling and healthy dinner that works well for any gathering.

Ingredients:

  • 4 pork chops
  • 2 red bell peppers, diced
  • 2 sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

Set oven temperature to 400F 200C

Put the sweet potatoes on a baking sheet, cover with a tablespoon of olive oil, and season with salt, pepper, and smoked paprika

For an even coat, toss

Bake for 25 to 30 minutes in a preheated oven, or until soft and gently browned

Meanwhile, sprinkle salt and pepper on the pork chops

Add the last tablespoon of olive oil to a skillet and place it over medium-high heat

Sear the pork chops until they are cooked through and golden brown, 3 to 4 minutes per side

Take out of the skillet and place aside

Add minced garlic and diced red bell peppers to the same skillet

Saut the peppers for 45 minutes, or until they are soft

To deglaze the pan, add the balsamic vinegar to the skillet and stir

Simmer for an additional 2 to 3 minutes, or until the vinegar has somewhat reduced

Top the roasted sweet potatoes with red pepper salsa and serve the pork chops

Add fresh cilantro as a garnish
