Green Tea and Strawberry Cupcakes



The earthy taste of the green tea and the sweet, juicy strawberries in these cupcakes go well together. Great for people who like both tea and cupcakes!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp green tea powder matcha
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup fresh strawberries, diced
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tbsp green tea powder matcha
  • 2 tbsp milk
  • 1/2 cup fresh strawberries, pureed

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Mix the flour, baking powder, salt, and green tea powder together in a bowl with a whisk

Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy

One at a time, add the eggs and beat well after each one

Add the vanilla extract and mix well

Add the dry ingredients to the wet mixture slowly, mixing them in with the milk every so often

Start with the dry ingredients and end with the milk

Don't mix any further than that

Carefully fold in the strawberry dice

Fill each cupcake liner about two thirds of the way to the top with batter

In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

Wait until the cupcakes are completely cool

For the frosting, beat the butter until it is smooth and creamy

Add the powdered sugar and green tea powder one at a time, mixing well after each addition

Keep beating the frosting until it is smooth and fluffy after you add the milk

To make a pink swirl, fold in the strawberry puree

Once the cupcakes are completely cool, use a knife or a piping bag to frost them
