Flourless Banana Pancakes



A tasty and nutritious Paleo substitute for regular pancakes are these flourless banana pancakes. Ripe bananas naturally sweeten them, and for added taste, a touch of vanilla and cinnamon is added.

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • Coconut oil for cooking

Instructions:

Mash the ripe bananas until smooth in a bowl

To the mashed bananas, add eggs, vanilla extract, and cinnamon

Stir until fully incorporated

In a skillet over medium heat, preheat the coconut oil

To make pancakes, spoon small amounts of the batter onto the skillet

Cook until golden brown, 2 to 3 minutes on each side

Warm up and serve with your preferred toppings, like almond butter or berries
