Crispy Peanut Butter Balls
Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup honey
- 2 cups crispy rice cereal
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
- 1/2 cup chopped peanuts optional
- 1/4 cup powdered sugar optional, for dusting
Instructions:
In a microwave-safe bowl, combine peanut butter and honey
Microwave for 30 seconds, then stir until smooth
Add crispy rice cereal to the peanut butter mixture and mix well until fully coated
Line a baking sheet with parchment paper
Using your hands, roll the mixture into small balls and place them on the baking sheet
In a separate microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil in 30-second intervals, stirring until smooth
Dip each peanut butter ball into the melted chocolate mixture, ensuring it's fully coated
Place it back on the parchment paper-lined baking sheet
If desired, sprinkle chopped peanuts over the chocolate-coated balls while the chocolate is still warm
Allow the chocolate to set by refrigerating the peanut butter balls for about 30 minutes
Optional: Dust the chilled peanut butter balls with powdered sugar before serving
