Ingredients: 1 cup quinoa 2 cups vegetable broth 1 can 15 oz black beans, drained and rinsed 1 cup corn kernels fresh or frozen 1 cup cherry tomatoes, halved 1/2 cup red onion, finely diced 1/4 cup fresh cilantro, chopped 1 avocado, diced 1 lime, juiced 2 tablespoons olive oil 1 teaspoon cumin 1 teaspoon chili powder Salt and pepper to taste Salsa and Greek yogurt for serving optional Instructions: Rinse quinoa under cold water In a medium saucepan, combine quinoa and vegetable broth Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, and cilantro...
